Barbecue madness!

The Sydney International Food Festival launched with a day of Barbecue Madness at The Sydney Morning Herald Growers' Market, on Saturday, October 3.

Fergus Henderson, owner of St John restaurant in London, whose book Nose to Tail Eating: A Kind of British Cooking helped revive the appreciation of offal, turned out to cook his nose to tail barbecue. The pigs on the spit were amazing, and at $15 a plate, it was the talk of the town.

A dozen Sydney chefs turned out to support Henderson with their own nose-to-tail dishes, either inspired by Henderson or created at their own restaurants.

''I've never spit-roasted a pig, so there we go - a new adventure. They've got me a spit wizard to help, which I need. It will be in safe hands," commented Henderson.

With a series of other barbecue events around town, including the Vietnamese barbecue at Cabramatta and a very Oxford-Street appropriate sausage sizzle in Taylor Square, we're sure that the first weekend of October is now officially marked on the calendar as Barbecue Madness.
